Veg Biryani is rice dish made with layers of rice, spices, yogurt, mixed veg curry, nuts and flavour of saffron milk.

- For Rice
- 2 cup long grain Basmati Rice
- 3 1/2 cup Water
- 1 tsp Salt
- 2 tbsp Ghee
- 1 Bay leaf
- 1 inch Cinnamon stick
- 2 Green Cardamom
- 2 Clove
- For Veg Curry
- 1/2 cup Green Peas
- 1/2 cup Capsicum (1 inch pieces)
- 1/2 cup Carrot(1 inch pieces)
- 8 Cauliflower florets
- 100 gm Paneer cubes
- 100 gm Yogurt
- 1 tbsp Raisins
- 1 tbsp Cashews
- 2 tbsp Ghee
- 1 finely chopped Onion
- 1 tbsp Garlic and Ginger paste
- 1/2 tsp Turmeric powder
- 1 tsp Red Chilli powder
- 1/2 tsp Garam masala powder
- 1/2 tsp Cumin seeds
- 1 Bay leaf
- 2 green Cardamom
- 2 Clove
- to taste Salt
- For Biryani
- 100 gm Paneer cubes
- 8 Cashews
- 6 Almonds
- 1/4 cup Milk
- pinch Saffron
- 2 tbsp finely chopped Coriander leaves
Steps to make to make Veg Dum Biryani
- For rice, heat ghee in a pressure cooker and put whole garam masalas.
- Add washed basmati rice and stir.
- Add water and salt, close the lid and cook for 1 whistle.
- Fry paneer pieces and nuts separately in a pan with ghee.
- Heat ghee in another pan and put bay leaf, cardamom, cloves and cumin seeds.
- Add chopped onions and sauté them on a medium heat.
- Add ginger, garlic paste and stir well.
- Add red chili, turmeric,, garam masala and salt.
- Add veggies and mix well.
- Add yogurt, water and cook for 10-15 minutes.
- Add half of almonds, cashews, raisins, fried paneer and mix well.
- Now in a thick pan or pressure cooker, layer half of the gravy first then layer half of the rice and sprinkle coriander leaves, and saffron milk.
- Now spread again remaining gravy and then cooked rice.
- Sprinkle chopped coriander leaves, saffron milk, some fried paneer pieces and nuts.
- Close the lid and keep the cooker on low heat for 8 - 10 minutes.
- Garnish with fried cashews, almonds and paneer pieces and serve hot.
