Veg Biryani is rice dish made with layers of rice, spices, yogurt, mixed veg curry, nuts and flavour of saffron milk.

  1. For Rice
  2. 2 cup long grain Basmati Rice
  3. 3 1/2 cup Water
  4. 1 tsp Salt
  5. 2 tbsp Ghee
  6. 1 Bay leaf
  7. 1 inch Cinnamon stick
  8. 2 Green Cardamom
  9. 2 Clove
  10. For Veg Curry
  11. 1/2 cup Green Peas
  12. 1/2 cup Capsicum (1 inch pieces)
  13. 1/2 cup Carrot(1 inch pieces)
  14. 8 Cauliflower florets
  15. 100 gm Paneer cubes
  16. 100 gm Yogurt
  17. 1 tbsp Raisins
  18. 1 tbsp Cashews
  19. 2 tbsp Ghee
  20. 1 finely chopped Onion
  21. 1 tbsp Garlic and Ginger paste
  22. 1/2 tsp Turmeric powder
  23. 1 tsp Red Chilli powder
  24. 1/2 tsp Garam masala powder
  25. 1/2 tsp Cumin seeds
  26. 1 Bay leaf
  27. 2 green Cardamom
  28. 2 Clove
  29. to taste Salt
  30. For Biryani
  31. 100 gm Paneer cubes
  32. 8 Cashews
  33. 6 Almonds
  34. 1/4 cup Milk
  35. pinch Saffron
  36. 2 tbsp finely chopped Coriander leaves

Steps to make to make Veg Dum Biryani

  1. For rice, heat ghee in a pressure cooker and put whole garam masalas.
  2. Add washed basmati rice and stir.
  3. Add water and salt, close the lid and cook for 1 whistle.
  4. Fry paneer pieces and nuts separately in a pan with ghee.
  5. Heat ghee in another pan and put bay leaf, cardamom, cloves and cumin seeds.
  6. Add chopped onions and sauté them on a medium heat.
  7. Add ginger, garlic paste and stir well.
  8. Add red chili, turmeric,, garam masala and salt.
  9. Add veggies and mix well.
  10. Add yogurt, water and cook for 10-15 minutes.
  11. Add half of almonds, cashews, raisins, fried paneer and mix well.
  12. Now in a thick pan or pressure cooker, layer half of the gravy first then layer half of the rice and sprinkle coriander leaves, and saffron milk.
  13. Now spread again remaining gravy and then cooked rice.
  14. Sprinkle chopped coriander leaves, saffron milk, some fried paneer pieces and nuts.
  15. Close the lid and keep the cooker on low heat for 8 - 10 minutes.
  16. Garnish with fried cashews, almonds and paneer pieces and serve hot.
